Many couples experience issues with developing pictures off of disposable cameras. You may want to shoot and develop a sample roll off of one of the disposable cameras, to make sure that the pictures will turn out ok.
Make sure to establish clear guidelines for how to return the cameras (and who to give them to).
Put someone in charge of encouraging people to take photos with the cameras! Some newly married couples encourage guests to take photos when they visit each table.
Put someone in charge of making sure that children don't obtain a camera and waste an entire roll of film.
